Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add white beans, vegetable broth, dried thyme, salt, and black pepper. Bring to a boil.
Reduce heat and let it simmer for 20 minutes.
Add chopped kale and cook for another 5 minutes.
Serve hot and enjoy!
