  • 4 large Eggs
  • ¼ cup Bell Pepper, diced
  • ¼ cup Onion, diced
  • ¼ cup Tomato, diced
  • ¼ cup Spinach, chopped
  • ¼ cup Cheddar Cheese, shredded
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a mixing bowl, whisk the eggs with a pinch of salt and black pepper.
  2. 2. Heat olive oil in a skillet over medium heat.
  3. 3. Add bell pepper, onion, and tomato to the skillet. Cook until softened, about 3-4 minutes.
  4. 4. Pour the whisked eggs into the skillet. Let it cook for a minute without stirring.
  5. 5. Sprinkle spinach and cheddar cheese evenly over the eggs.
  6. 6. Fold the omelet in half and cook for another 2-3 minutes until the eggs are fully set.
