Vegan Split Pea Soup

Main Ingredients
- 1 cup dried split peas
- 1  onion, chopped
- 2 cloves garlic, minced
- 2  carrots, chopped
- 2 stalks celery, chopped
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 1. Rinse the split peas under cold water and set aside. 
- 2. In a large pot, sauté the chopped onion and minced garlic until soft. 
- 3. Add the chopped carrots and celery, and cook for a few more minutes. 
- 4. Add the rinsed split peas, vegetable broth, dried thyme, salt, and black pepper to the pot. 
- 5. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the peas are tender. 
- 6. Adjust seasoning to taste and serve hot.
