Ingredients 

Main Ingredients

  • 1 cup dried split peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Rinse the split peas under cold water and set aside.
  2. 2. In a large pot, sauté the chopped onion and minced garlic until soft.
  3. 3. Add the chopped carrots and celery, and cook for a few more minutes.
  4. 4. Add the rinsed split peas, vegetable broth, dried thyme, salt, and black pepper to the pot.
  5. 5. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the peas are tender.
  6. 6. Adjust seasoning to taste and serve hot.
