Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 2 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 4 cups Vegetable Broth
  • 2 cans Black Beans, drained and rinsed
  • 1 can Diced Tomatoes
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black Pepper to taste
  • 1 tablespoon Lime Juice freshly squeezed
  • 0.25 cup Cilantro, chopped for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, and smoked paprika. Cook for another 1-2 minutes.
  4. Add the vegetable broth, black beans, diced tomatoes, salt, and black pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Use a blender to puree the soup until smooth, or leave it chunky if you prefer.
  7. Stir in the lime juice and adjust seasoning if needed.
  8. Garnish with chopped cilantro before serving.
