Instructions
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic, ground cumin, and smoked paprika. Cook for another 1-2 minutes.
Add the vegetable broth, black beans, diced tomatoes, salt, and black pepper. Bring to a boil.
Reduce heat and let it simmer for 20 minutes.
Use a blender to puree the soup until smooth, or leave it chunky if you prefer.
Stir in the lime juice and adjust seasoning if needed.
Garnish with chopped cilantro before serving.
