Ingredients 

Brine

  • 1 gallon water
  • 1 cup kosher salt
  • ½ cup brown sugar
  • 1 tablespoon black peppercorns
  • 1 tablespoon allspice berries
  • 1 tablespoon crushed red pepper flakes
  • 4 bay leaves
  • 1 large orange, quartered
  • 1 large onion, quartered

Instructions 

  1. In a large pot, combine water, kosher salt, and brown sugar. Stir until dissolved.
  2. Add the peppercorns, allspice berries, red pepper flakes, bay leaves, orange, and onion.
  3. Bring to a boil, then remove from heat and let cool to room temperature.
  4. Refrigerate until thoroughly chilled.
  5. Submerge the turkey in the brine, cover, and refrigerate for 24 hours before cooking.
