Ingredients

  • 8 Large jalapeños
  • 1 cup Cooked brisket, shredded
  • 8 oz Cream cheese, softened
  • 8 slices Bacon
  • 1 tablespoon BBQ rub

Instructions 

  1. Preheat your smoker to 275°F (135°C).
  2. Cut the jalapeños in half lengthwise and remove the seeds and membranes.
  3. In a bowl, mix the shredded brisket and cream cheese until well combined.
  4. Stuff each jalapeño half with the brisket and cream cheese mixture.
  5. Wrap each stuffed jalapeño with a slice of bacon and secure with a toothpick.
  6. Sprinkle the BBQ rub over the bacon-wrapped jalapeños.
  7. Place the jalapeños in the smoker and cook for about 1 hour, or until the bacon is crispy.
  8. Remove from the smoker and let cool slightly before serving.
