Main Ingredients
- 500 g Chicken Breast cut into bite-sized pieces
- 1 cup Pineapple Chunks drained
- 1 medium Bell Pepper cut into chunks
- 1 medium Onion cut into chunks
Sauce Ingredients
- ¼ cup Ketchup
- ¼ cup Rice Vinegar
- ¼ cup Brown Sugar
- 2 tablespoon Soy Sauce
- 1 tablespoon Cornstarch mixed with 2 tablespoon water
1. In a bowl, mix ketchup, rice vinegar, brown sugar, and soy sauce. Set aside.
2. Heat oil in a wok over medium-high heat. Add chicken and cook until browned.
3. Add bell pepper and onion. Stir-fry for 3-4 minutes.
4. Pour in the sauce and bring to a simmer. Add pineapple chunks.
5. Stir in cornstarch mixture and cook until sauce thickens.
6. Serve hot over rice.
