Ingredients

  • 2 cups dried black-eyed peas rinsed and sorted
  • 6 cups water
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 large ham hock
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 teaspoon cayenne pepper optional

Instructions 

  1. 1. In a large pot, combine the black-eyed peas and water. Bring to a boil over high heat.
  2. 2. Reduce the heat to low and simmer for 5 minutes. Remove from heat and let sit for 1 hour. Drain and rinse the peas.
  3. 3. In the same pot, heat a bit of oil over medium heat. Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
  4. 4. Add the ham hock, black-eyed peas, salt, black pepper, and cayenne pepper (if using). Pour in 6 cups of water.
  5. 5. Bring to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, or until the peas are tender.
  6. 6. Remove the ham hock, shred the meat, and return it to the pot. Adjust seasoning if necessary. Serve hot.
