Ingredients 

Main Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 2 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine optional
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • to taste salt and pepper

Instructions 

  1. 1. In a slow cooker, combine lamb, carrots, potatoes, onion, and garlic.
  2. 2. Pour in beef broth and red wine. Stir in tomato paste, rosemary, and thyme.
  3. 3. Season with salt and pepper to taste.
  4. 4. Cover and cook on low for 8 hours or until lamb is tender.
  5. 5. Serve hot and enjoy!
