Ingredients

  • 2 cups Carrots, chopped
  • 2 cups Broccoli florets
  • 2 cups Bell peppers, chopped
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped carrots, broccoli florets, and bell peppers.
  3. Drizzle the olive oil over the vegetables and sprinkle with salt, black pepper, and garlic powder. Toss to coat evenly.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned, stirring halfway through.
  6. Remove from the oven and serve immediately.
