  • 4 medium beets washed and trimmed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground
  • ½ cup feta cheese crumbled

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wrap each beet individually in aluminum foil and place them on a baking sheet.
  3. Roast the beets in the preheated oven for about 40 minutes, or until they are tender when pierced with a fork.
  4. Remove the beets from the oven and let them cool slightly. Once cool enough to handle, peel off the skins and cut the beets into wedges.
  5. In a mixing bowl, toss the beet wedges with olive oil, salt, and black pepper.
  6. Transfer the seasoned beets to a serving platter and sprinkle with crumbled feta cheese.
  7. Serve warm or at room temperature.
