Roasted Beets with Feta

Main Ingredients
- 4 medium beets washed and trimmed
- 2 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper freshly ground
- ½ cup feta cheese crumbled
- Preheat your oven to 400°F (200°C). 
- Wrap each beet individually in aluminum foil and place them on a baking sheet. 
- Roast the beets in the preheated oven for about 40 minutes, or until they are tender when pierced with a fork. 
- Remove the beets from the oven and let them cool slightly. Once cool enough to handle, peel off the skins and cut the beets into wedges. 
- In a mixing bowl, toss the beet wedges with olive oil, salt, and black pepper. 
- Transfer the seasoned beets to a serving platter and sprinkle with crumbled feta cheese. 
- Serve warm or at room temperature.
