  • 4 cups Potatoes, peeled and diced
  • 1 cup Hash Browns
  • 1 cup Milk
  • 1 cup Chicken Broth
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoon Butter
  • to taste Salt and Pepper

Instructions 

  1. 1. In a pot, melt butter over medium heat. Add chopped onion and minced garlic. Cook until softened.
  2. 2. Add diced potatoes, chicken broth, and milk. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  3. 3. In a frying pan, cook hash browns until crispy. Set aside.
  4. 4. Use an immersion blender to blend the soup until smooth. Season with salt and pepper to taste.
  5. 5. Serve the soup hot, topped with crispy hash browns.
