1. Heat the olive oil in a skillet over medium heat.
2. Season the chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides and cooked through, about 5-7 minutes per side.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add the pineapple chunks, pineapple juice, soy sauce, honey, garlic powder, and ginger powder. Stir to combine.
5. Bring the mixture to a simmer and cook until the sauce thickens slightly, about 5 minutes. If using cornstarch, mix it with a little water and add to the sauce to thicken.
6. Return the chicken to the skillet and coat with the sauce. Cook for an additional 2-3 minutes to heat through.
7. Serve the pineapple chicken over rice or with your favorite side dish.
