Ingredients 

Broth

  • 2 lbs Beef bones
  • 1 Onion, halved
  • 1 Ginger, sliced
  • 5 cloves Star anise
  • 1 stick Cinnamon
  • 1 tablespoon Coriander seeds
  • 1 tablespoon Fennel seeds
  • 1 tablespoon Salt
  • 1 tablespoon Sugar
  • 2 tablespoon Fish sauce

Noodles and Toppings

  • 1 lb Rice noodles
  • 1 lb Beef sirloin, thinly sliced
  • 1 cup Bean sprouts
  • 1 Lime, cut into wedges
  • 1 cup Fresh herbs (cilantro, basil, mint)
  • 1 Chili peppers, sliced

Instructions 

  1. 1. Roast the beef bones, onion, and ginger at 400°F for 30 minutes.
  2. 2. Transfer to a large pot, add water, and bring to a boil. Skim off any foam.
  3. 3. Add star anise, cinnamon, coriander seeds, fennel seeds, salt, and sugar. Simmer for 3 hours.
  4. 4. Strain the broth and return to the pot. Add fish sauce.
  5. 5. Cook rice noodles according to package instructions.
  6. 6. Divide noodles into bowls, top with beef slices, and pour hot broth over to cook the meat.
  7. 7. Serve with bean sprouts, lime wedges, fresh herbs, and chili peppers.
