  • 2 medium zucchini sliced into rounds
  • 1 cup Parmesan cheese grated
  • 1 cup bread crumbs
  • 2 eggs beaten
  • 1 cup flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup vegetable oil for frying

Instructions 

  1. 1. Slice the zucchini into ¼-inch rounds.
  2. 2. In a bowl, combine the flour, salt, and pepper.
  3. 3. In another bowl, beat the eggs.
  4. 4. In a third bowl, mix the Parmesan cheese and bread crumbs.
  5. 5. Dredge each zucchini slice in the flour mixture, then dip in the beaten eggs, and finally coat with the Parmesan-bread crumb mixture.
  6. 6. Heat the vegetable oil in a frying pan over medium heat.
  7. 7. Fry the zucchini slices until golden brown, about 2-3 minutes per side.
  8. 8. Remove and drain on paper towels. Serve hot.
