- 2 medium zucchini sliced into rounds
- 1 cup Parmesan cheese grated
- 1 cup bread crumbs
- 2 eggs beaten
- 1 cup flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup vegetable oil for frying
1. Slice the zucchini into ¼-inch rounds.
2. In a bowl, combine the flour, salt, and pepper.
3. In another bowl, beat the eggs.
4. In a third bowl, mix the Parmesan cheese and bread crumbs.
5. Dredge each zucchini slice in the flour mixture, then dip in the beaten eggs, and finally coat with the Parmesan-bread crumb mixture.
6. Heat the vegetable oil in a frying pan over medium heat.
7. Fry the zucchini slices until golden brown, about 2-3 minutes per side.
8. Remove and drain on paper towels. Serve hot.
