Ingredients 

Main Ingredients

  • 1 cup Pearl Barley
  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 8 oz Mushrooms, sliced
  • 6 cups Vegetable Broth
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion and garlic, and sauté until softened.
  3. 3. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  4. 4. Stir in the pearl barley, vegetable broth, thyme, salt, and pepper.
  5. 5. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the barley is tender.
  6. 6. Adjust seasoning if needed and serve hot.
