Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 cup red lentils rinsed and drained
  • 1 can chickpeas drained and rinsed
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • 1 cup fresh cilantro, chopped
  • 1 cup fresh parsley, chopped
  • 1 cup vermicelli noodles broken into small pieces
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion, celery, and garlic. Cook until softened.
  2. Add cinnamon, ginger, turmeric, cumin, and paprika. Cook for another minute.
  3. Add lentils, chickpeas, tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
  4. Add cilantro, parsley, and vermicelli noodles. Cook for another 10 minutes.
  5. Season with salt and pepper to taste. Serve hot.
