- 1 cup Cornmeal
- 1 cup All-purpose flour
- 1 tablespoon Baking powder
- 1 teaspoon Salt
- 1 cup Milk
- 2 Eggs
- ¼ cup Vegetable oil
- 1 cup Corn kernels fresh or frozen
- 1 cup Cheddar cheese shredded
- 2 Jalapeños diced
Preheat oven to 400°F (200°C).
In a large mixing bowl, combine cornmeal, flour, baking powder, and salt.
In another bowl, whisk together milk, eggs, and vegetable oil.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in corn kernels, cheddar cheese, and jalapeños.
Pour the batter into a greased baking pan.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let cool slightly before serving.
