Main Ingredients
- 1 cup Cornmeal
- 1 cup All-purpose flour
- 1 tablespoon Baking powder
- 1 teaspoon Salt
- 1 cup Milk
- 2 Eggs
- ¼ cup Vegetable oil
- 1 cup Corn kernels fresh or frozen
- 1 cup Cheddar cheese shredded
- 2 Jalapeños diced
- Preheat oven to 400°F (200°C). 
- In a large mixing bowl, combine cornmeal, flour, baking powder, and salt. 
- In another bowl, whisk together milk, eggs, and vegetable oil. 
- Pour the wet ingredients into the dry ingredients and stir until just combined. 
- Fold in corn kernels, cheddar cheese, and jalapeños. 
- Pour the batter into a greased baking pan. 
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. 
- Let cool slightly before serving.
