Ingredients

  • 2 cups Heavy cream not ultra-pasteurized
  • 1 tablespoon Lemon juice freshly squeezed

Instructions 

  1. Pour the heavy cream into a heavy-bottomed saucepan and heat over medium heat.
  2. Stir frequently until the cream reaches 190°F (88°C).
  3. Remove from heat and stir in the lemon juice.
  4. Let the mixture cool to room temperature, then cover and refrigerate for 8-12 hours.
  5. Line a fine mesh strainer with cheesecloth and set it over a bowl.
  6. Pour the mixture into the strainer and let it drain for 1-2 hours.
  7. Transfer the mascarpone to a container and refrigerate until ready to use.
