Louisiana Sweet Potato Pancakes

- 1 cup mashed sweet potatoes
- 1 cup all-purpose flour
- 2 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoon melted butter
- 1 teaspoon vanilla extract
In a mixing bowl, combine the mashed sweet potatoes, flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Heat a griddle or frying pan over medium heat and lightly grease it.
