Add grated zucchini and lemon zest to the dry ingredients and mix well.
In another bowl, beat the eggs, then add vegetable oil and lemon juice. Mix until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
