Ham Bone and Vegetable Soup
A hearty soup made with leftover ham bone and fresh vegetables.

Main Ingredients
- 1 Ham bone with some meat left on
- 2 cups Carrots chopped
- 2 cups Celery chopped
- 1 cup Onion chopped
- 2 cups Potatoes diced
- 8 cups Water
- 2 cloves Garlic minced
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
- 1 teaspoon Dried thyme
- 1 teaspoon Dried parsley
1. In a large pot, combine the ham bone, water, and garlic. Bring to a boil, then reduce heat and simmer for 1 hour.
2. Add the carrots, celery, onion, and potatoes to the pot. Season with salt, pepper, thyme, and parsley. Simmer for another 30 minutes, or until vegetables are tender.
3. Remove the ham bone from the soup. Let it cool slightly, then remove any remaining meat from the bone. Chop the meat and return it to the pot.
4. Taste and adjust seasoning if necessary. Serve hot.
