- 4 large eggs
- ¼ cup feta cheese, crumbled
- ½ cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- 1 tablespoon olive oil
- to taste salt and pepper
1. In a mixing bowl, whisk the eggs with a pinch of salt and pepper.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Pour the eggs into the skillet and cook for about 2 minutes, until the edges start to set.
4. Add the feta cheese, cherry tomatoes, and spinach on one half of the omelet.
5. Fold the other half of the omelet over the filling and cook for another 2-3 minutes, until the eggs are fully set.
6. Slide the omelet onto a plate and serve hot.
