Garlic Scape Pesto Recipe

- 1 cup Garlic Scapes chopped
- ½ cup Parmesan Cheese grated
- ½ cup Olive Oil
- ¼ cup Pine Nuts toasted
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt
- ½ teaspoon Black Pepper freshly ground
Combine garlic scapes, Parmesan cheese, pine nuts, lemon juice, salt, and pepper in a food processor.
Pulse until the mixture is finely chopped.
With the processor running, slowly pour in the olive oil until the pesto is smooth.
Taste and adjust seasoning if necessary.
Use immediately or store in an airtight container in the refrigerator for up to a week.
