- 4 cups All-purpose flour
- 1 tablespoon Sugar
- 1 teaspoon Salt
- 1 tablespoon Yeast
- 1 ½ cups Milk warmed
- 2 tablespoon Butter melted
- 1 cup Cornmeal for dusting
1. In a mixing bowl, combine the flour, sugar, salt, and yeast.
2. Add the warmed milk and melted butter. Mix until a dough forms.
3. Knead the dough for about 10 minutes until smooth and elastic.
4. Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size.
5. Punch down the dough and roll it out to about ½ inch thick. Cut into rounds using a biscuit cutter.
6. Dust each round with cornmeal and let them rise for another 30 minutes.
7. Preheat a griddle over medium heat. Cook the muffins for about 7-10 minutes on each side, or until golden brown.
8. Let the muffins cool before splitting and toasting.
