Ingredients 

Main Ingredients

  • 2 lbs Beef chuck cut into cubes
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 teaspoon Thyme dried
  • 2 teaspoon Rosemary dried

Instructions 

  1. 1. Heat olive oil in a Dutch oven over medium heat.
  2. 2. Add beef cubes and brown on all sides. Remove and set aside.
  3. 3. In the same pot, add onions and garlic. Cook until softened.
  4. 4. Stir in tomato paste, then add beef back to the pot.
  5. 5. Pour in beef broth, add carrots, potatoes, thyme, rosemary, salt, and pepper.
  6. 6. Bring to a boil, then reduce heat to low. Cover and simmer for 3 hours.
  7. 7. Serve hot and enjoy!
