Cranberry Orange Muffins

- 2 cups all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- ½ cup vegetable oil
- 1 tablespoon orange zest
- 1 cup fresh cranberries coarsely chopped
Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease it well.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In another bowl, mix the milk, vegetable oil, and orange zest.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
Gently fold in the chopped cranberries.
Divide the batter evenly among the muffin cups.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
