Ingredients 

Main Ingredients

  • 1 can Black beans drained and rinsed
  • 1 can Corn drained
  • 1 cup Cherry tomatoes halved
  • 1 cup Bell pepper diced
  • ½ cup Red onion diced
  • ¼ cup Cilantro chopped
  • 1 pc Jalapeño seeded and minced
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine black beans, corn, cherry tomatoes, bell pepper, red onion, cilantro, and jalapeño.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat.
  4. Serve immediately or refrigerate for later.
