Main Ingredients
- 3 lbs Beef Chuck Roast cut into chunks
- 3 pcs Chipotle Peppers in Adobo Sauce
- 1 tablespoon Ground Cumin
- 1 tablespoon Dried Oregano
- 1 teaspoon Ground Cloves
- 6 cloves Garlic minced
- ½ cup Fresh Lime Juice
- ½ cup Apple Cider Vinegar
- 3 pcs Bay Leaves
- 2 cups Beef Broth
Place the beef chunks in the slow cooker.
In a blender, combine chipotle peppers, cumin, oregano, ground cloves, garlic, lime juice, and apple cider vinegar. Blend until smooth.
Pour the blended mixture over the beef in the slow cooker.
Add bay leaves and beef broth to the slow cooker.
Cover and cook on low for 8 hours, or until the beef is tender and easily shredded.
Remove bay leaves and shred the beef with two forks.
Serve the barbacoa in tacos, burritos, or bowls with your favorite toppings.
