Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 cups Chicken Broth
  • 2 cups Potatoes, peeled and diced
  • 1 cup Cooked Chicken, shredded
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 cup Milk
  • 2 tablespoon Fresh Parsley, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Sauté until softened.
  3. Pour in chicken broth and bring to a boil.
  4. Add diced potatoes and cook until tender, about 15 minutes.
  5. Stir in shredded chicken, salt, and black pepper. Simmer for another 5 minutes.
  6. Reduce heat and stir in milk. Cook until heated through, but do not boil.
  7. Garnish with fresh parsley before serving.
