Instructions
Heat olive oil in a large pot over medium heat.
Add diced onion and minced garlic. Sauté until softened.
Pour in chicken broth and bring to a boil.
Add diced potatoes and cook until tender, about 15 minutes.
Stir in shredded chicken, salt, and black pepper. Simmer for another 5 minutes.
Reduce heat and stir in milk. Cook until heated through, but do not boil.
Garnish with fresh parsley before serving.
