Broccoli and Stilton Soup

Main Ingredients
- 1 head Broccoli cut into florets
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 liter Vegetable stock
- 150 grams Stilton cheese crumbled
- 100 ml Double cream
- to taste Salt and pepper
1. Heat a large pot over medium heat and add a splash of oil.
2. Add the chopped onion and garlic, and cook until softened.
3. Add the broccoli florets and vegetable stock. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the broccoli is tender.
4. Remove from heat and blend the soup until smooth.
5. Stir in the crumbled Stilton cheese and double cream. Season with salt and pepper to taste.
6. Serve hot with crusty bread.
