Broccoli and Stilton Soup

Main Ingredients
- 1 head Broccoli cut into florets
- 1 large Onion chopped
- 2 cloves Garlic minced
- 1 liter Vegetable stock
- 150 grams Stilton cheese crumbled
- 100 ml Double cream
- to taste Salt and pepper
- 1. Heat a large pot over medium heat and add a splash of oil. 
- 2. Add the chopped onion and garlic, and cook until softened. 
- 3. Add the broccoli florets and vegetable stock. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the broccoli is tender. 
- 4. Remove from heat and blend the soup until smooth. 
- 5. Stir in the crumbled Stilton cheese and double cream. Season with salt and pepper to taste. 
- 6. Serve hot with crusty bread.
