Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • ¼ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • ¼ cup Vegetable oil
  • 1 Egg beaten

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper muffin liners.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, vegetable oil, and beaten egg. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
