Ingredients 

Main Ingredients

  • 1 lb Beef cut into cubes
  • 1 lb Pork cut into cubes
  • 2 tablespoon Vegetable Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell Pepper chopped
  • 1 Carrot sliced
  • 2 cups Beef Broth
  • 1 cup Coconut Milk
  • 1 teaspoon Thyme dried
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 Scotch Bonnet Peppers whole
  • 2 cups Spinach chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the beef and pork, and cook until browned on all sides.
  2. Add the onion, garlic, bell pepper, and carrot. Cook until the vegetables are softened.
  3. Pour in the beef broth and coconut milk. Stir in the thyme, salt, and black pepper.
  4. Add the Scotch bonnet peppers. Bring to a boil, then reduce the heat and simmer for 1.5 to 2 hours.
  5. Remove the Scotch bonnet peppers. Stir in the spinach and cook for an additional 5 minutes.
  6. Serve hot and enjoy!
